Corvina, Corvinone, Rondinella, Oseleta, Croatina
AREA OF PRODUCTION:
The hills of Colognola ai Colli in the Illasi Valley; tuffaceous,
clayey and limestone soils; south-west facing and rising to
approximately 200 m above sea level.
TRAINING SYSTEMS:
Pergola (3000 vines per hectare) and Guyot (4500 vines per
hectare).
YIELD PER HECTARE:
Around 9000 kg of grapes (5400 litres of wine), with summer
pruning if necessary.
HARVEST PERIOD:
Starting around the end of September; the grapes are picked by hand
and placed in plastic crates, then left to dry for around 40- 60 days in
our drying lofts.
WINEMAKING:
Roller crushing and destemming. The fermentation temperature
does not need to be controlled because the season is cool and
because we only select the wine with the maximum extraction
Long maceration with pumping over several times; separation
from the pomace only at the end of fermentation, in order to
obtain the finest characteri stics from the lightly dried grapes. The
malolactic fermentation is encouraged due to the wine being
matured in small oak barrels for over a year. This is followed by
racking a few times to clean the wine, followed by stabilization,
bottling and extended cellaring be fore release.
TASTING SUGGESTIONS:
Roasted, boiled or stewed red meats and game, as well as hard
and sharp cheeses.
Serve preferably in large crystal glasses, at room temperature.
